Coconut Flour Bread

Coconut flour is extremely dense and high in fiber. It absorbs liquids very quickly, so it requires a number of eggs to help it bind together. This means there is no need for xanthan gum. The eggs also act as a riser, so no yeast is needed either.

Ingredients

  • 3/4 cup coconut flour
  • 1/2 cup coconut oil
  • 6 eggs
  • 2 tablespoons honey
  • 1/2 teaspoon salt

Instructions

  1. Combine the ingredients in a large bowl.
  2. Mix until the batter is smooth with no lumps.
  3. Let the mixture stand for 10 minutes; it will get slightly fluffier.
  4. Pour into a greased bread pan and place in an oven heated to 350 degrees.

  2. In a separate bowl, combine the water, olive oil, molasses and vinegar.
  3. Add the wet ingredients to the dry, mixing them together well.
  4. Pour into a greased bread pan and cover with aluminum foil.
  5. Bake at 400 degrees for one hour. Then remove the foil and bake for an additional 10 minutes or until brown on top.
