The Perfect Pancake
A good gluten-free pancake recipe isn't terribly different from your typical pancake recipe. In fact, in most cases, you can just substitute your favorite gluten-free flour for the ordinary flour in your favorite pancake recipe. A few more alterations may be necessary, depending on which gluten-free flour you choose, but for the most part, such pancakes are simple to make.
A Gluten-Free Pancake Recipe
For a classic gluten-free pancake you'll need:
2.5 c. gluten-free flour
2 eggs at room temperature
3 Tbsp melted butter, grapeseed oil, or canola oil
2Tbsp sugar or honey
1.5 c. milk at room temperature
½ tsp vanilla extract
2 tsp baking powder
½ tsp salt
Mixing your wet ingredients separately from the dry can improve the consistency of your pancakes. However, it's even more important that you use room temperature ingredients, particularly if you are employing melted butter in your mix. Cold eggs and milk can solidify the butter, creating lumpy pancakes!
For Fluffy Pancakes
Another trick for lighter fluffier pancakes is to separate your eggs, beating the egg whites until they rise. The yolks can be mixed in with the wet ingredients. Then fold your egg whites into the mix after the dry ingredients have been added and blended. This little trick will lessen the density of your pancakes considerably.
There are many ways to modify your gluten-free pancake recipe. You can toss fresh blueberries or other kinds of fruit into your pancakes. A trick to keeping an even number of berries within your pancakes is to add the berries in individually once your pancake is already on the griddle. Tossing a fresh banana into the batter before you cook the pancakes can add additional sweetness, though you may want to increase your flour content. Other fun additions include walnuts and chocolate chips!
The real fun of pancakes is found in the toppings. Whether you add freshly whipped cream with just a teaspoon of added sugar, or maple syrup, fresh bananas and berries, and even yogurt chips, this individualization process can be different for every member of your breakfast table!
