Coconut Chicken

Make your own, gluten-free chicken tenders using coconut flour as your breading ingredient.

  • Makes six tenders
  • Prep time: five minutes
  • Bake time: 30 minutes
  • Oven temperature: 425 degrees

Ingredients

  • 6 chicken tenders
  • 1/4 cup coconut flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground white pepper
  • 1/4 cup olive oil

Instructions

  1. Pour the olive oil onto a plate and set aside.
  2. Pour the coconut flour and spices onto a second plate and combine well with a fork.
  3. Dip each tender into the olive oil, then place it in the coconut mixture.
  4. Turn the tender to coat in the flour.
  5. Place the chicken on a baking dish.
  6. Bake at 425 degrees for 30 minutes or until crispy and brown.
  7. Serve with your favorite side dish.

Coconut Flat Bread

This fast flatbread rounds can be used for sandwiches, dipping or toasting.

  • Makes four five-inch flatbreads
  • Prep time: five minutes
  • Frying time: 10 minutes

Ingredients

  • 2 eggs
  • 2 tablespoons coconut flour
  • 1/8 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup milk

Instructions

  1. Mix all the ingredients together in a large bowl until there are no lumps.
  2. Heat butter, olive oil or coconut oil in a large skillet.
  3. Pour five-inch round pancakes of batter into the skillet.
  4. Wait until the surface of the flatbread is beginning to bubble, then flip.
  5. Cook for an additional two minutes and remove from heat.

Yellow Coconut Cake

Coconut flour can make a grain-free birthday cake ready for your favorite frosting.

  • Makes two nine-inch cake layers
  • Prep time: 15 minutes
  • Bake time: 40 minutes
  • Oven temp: 350 degrees

Ingredients

  • 2 cups coconut flour
  • 12 eggs
  • 3/4 cup honey
  • 2-1/4 cups milk
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1-1/4 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350 degrees.
  2. Grease two nine-inch cake pans and set aside.
  3. Mix together the milk, eggs, honey and vanilla in a large bowl. Set aside.
  4. Mix together the coconut flour with the baking soda and salt in a separate bowl.
  5. Slowly add the coconut mixture to the milk mixture, stirring well to incorporate and ensure no lumps.
  6. Pour the batter into the prepared cake pans.
  7. Bake at 350 degrees for 40 minutes or until a toothpick inserted into the center of each cake comes out clean.
  8. Let cool completely.
  9. Frost with your favorite icing.

Using Coconut Flour

Coconut flour is extremely high in fiber, so the results of your cooking may be denser, dryer or more filling than you are used to. To help compensate for this when substituting for regular flour, always use at least double the number of eggs you would use in a regular flour recipe. The eggs will act as a binder, so there is no need for xanthan gum or another binding replacement.
